As a freshman, he averaged 21 points and was named District 6-6A Offensive Player of the Year. As a sophomore, he averaged 23.9 points and earned District 6-6A MVP honors. For his junior season, he transferred to iSchool of Lewisville and averaged 24.8 points. He moved to IMG Academy for his senior year, averaging 17.8 points and shooting 41 percent from three. He was a consensus five-star recruit and committed to Baylor.

At Baylor, George scored 32 points against West Virginia on January 11, 2023. He was named Big 12 Freshman of the Year and Second Team All-Big 12. He scored 506 points as a freshman, the second most in school history, and set the program record for most 20-point games by a freshman with 20. He declared for the 2023 NBA draft.

The Utah Jazz selected George with the 16th overall pick. He made his NBA debut on October 25, 2023. On December 12, 2023, he scored a career-high 30 points against Oklahoma City. On January 20, 2026, he recorded a career-high 43 points against Minnesota. On December 15, 2025, he scored 37 points in an overtime win over Dallas.
